>Little 5 Minute Chocolate Cake

This week has been really busy and the cookies I made yesterday were kind of disgusting, so I couldn’t blog about them. I needed a fast recipe to make up for all the wasted cookie-making time, and started thinking about a chocolate cake I used to make in the microwave.

When I was at high school, I used to come home in the afternoons and make this cake. I would split it in half and microwave it in two mugs – one for me and one for my brother. It took about 5 minutes and was always comforting on a rainy, cold Melbourne day.

I spiced mine up with Salted Caramel, straight out of a jar. You could use ice cream, cream, or nothing at all. All you need to make this is a mug and a tablespoon and you get easy, hot, fudgy, chocolate cake in minutes.

4 tbsp plain flour
2 tbsp white sugar
2 tbsp cocoa
1 egg
3 tbsp vegetable oil
3 tbsp milk
3 tbsp chopped chocolate

Put the flour, sugar and cocoa in a large mug (or small bowl) and mix well.

Add the egg, oil and milk and mix well until completely combined, making sure there are no pockets of dry ingredients left at the bottom.

Add the chocolate and stir until evenly distributed.

Microwave on high for two and a half minutes. The cake will rise high out of the mug while it is microwaving, but don’t worry, it will sink back down once you open the door.

Eat it straight out of the mug or invert it onto a plate and cover with lashings of something or the other.

    This recipe was respinsible for my dessert tonight. :)

    I’m pretty sure the cake would’ve turned out better if I had actually stuck to the recipe, though…we were a little short on resources in the house so I wound up using canola oil instead of vegetable oil, and skipping the chocolate chips, adding some instant coffe, playing around with the sugar, and ultimately created a slightly bland cake sweetened up with caramel sauce. So not bad, I suppose. :3
